Above you get a great look at our winemaker/owner, John Skrip III, sabering a bottle of Clover Hill Sparkling Vidal Blanc. While this is a gorgeous way to open the bottle, it can be very dangerous so we do not recommend trying it at home!

There are many ways to pop the top on a bottle of bubbly, but let us give you some tips for the safest and most effective way to open your bottle!
- Make sure your bubbly is well chilled and has NOT been shaken. Keep your bubbly in the refrigerator for at least 2 hours, and you can even put it in the freezer for 20 minutes prior to opening it.
- Twist off the wire hood and as you do so, keep your thumb on top of the cork to keep it from pushing out on its own.
- Hold the cork with one hand and slowly twist the bottle with the other. This will allow you to ease the cork out of the bottle. If you have done this correctly, you should hear a soft pop and nothing should gush out of the bottle.
- Never use a corkscrew or shake the bottle and aim it at someone!
- Pour slowly into a tall Champagne flute to showcase the beautiful stream of bubbles.

Sparkling Chambourcin - This bubbly embraces the beauty of Chambourcin, showcasing fruity and berry characteristics with elegant bubbles. Produced using the traditional méthode champenoise, this sparkling wine is finished with just a touch of sweetness. Serve well chilled in a tall champagne flute to enhance the tiny streams of bubbles.


Sparkling Vidal Blanc - This beautiful bubbly is made using méthode champenoise, which indicates this wine underwent a secondary fermentation in the bottle. Sparkling Vidal has crisp flavors of lemon and grapefruit with soft, yeasty undertones.


Sparkling Cayuga White - The bubbles are a perfect complement to the fruitiness of this sparkling wine. Cayuga is full of fresh grape characteristics and a soft, smooth finish. This sparkling wine is a real crowd pleaser.

Let’s celebrate 2017 as it comes to a close and ring in the new year with a Holiday Celebration Flight at Clover Hill Winery in Breinigsville. Flights will be $12 each. Reservations are not required, stop in anytime from 12-4pm to partake in the flight.

Vino in the Valley Passport Program

The Vino in the Valley Passport Program along the Lehigh Valley Wine Trail involves purchasing a passport for $35 and then visiting each of the wineries during the four weekends in March. As you visit the Lehigh Valley Wine Trail's eight member wineries, you will be offered delicious food and wine pairings (tasting sized) to sample. Clover Hill Winery's menu will be released in January of 2018.

Your passport will be stamped during each visit and ultimately entered into the Grand Prize Drawing once it has stamps from all eight wineries. It is recommended that you plan on visiting no more than three wineries a day so you can get the most enjoyment out of your experience without being rushed. Plan to stop at a local restaurant along the way from winery to winery as there are many great options.

NEW THIS YEAR:
This year, each winery will be giving away 25 $50 local restaurant gift certificates at random over the four weekends of Vino in the Valley. There will be 200 instant winners! One in 9 passport holders will win. Visit all 8 wineries to improve your chance of winning.

Also, get your passport stamped by all 8 wineries for a chance to win the Grand Prize Drawing – a gift certificate for $250 Wine Trail Bucks (to be given away in April after the event is over).

How the Vino in the Valley Passport Program Works:
1. Purchase a passport for $35, either in person at one of the Lehigh Valley Wine Trail's 8 member wineries, or online. (Passport program participants must be age 21 or older)
2. During the four weekends of March (Saturdays & Sundays), visit the Lehigh Valley Wine Trail's member wineries to enjoy a food and wine pairing (tasting sized) and have your passport stamped in the corresponding winery box on the front.
3. Get stamps from all 8 wineries before filling out your contact information on the bottom of the front side of the passport.
4. Tear it off and turn it in at the last winery you visit in order to be entered to the Grand Prize Drawing.
